Are validators logging / storing IP address of each transaction somewhere?

This information would get pretty noisy pretty quickly, since for many servers they wouldn't know what IP address the transaction originated from. They would only know which rippled server relayed the transaction to them, which in many cases is going to be a popular peer that has a lot of connections (likely one of Ripple's public servers).

If you're submitting transactions to someone else's server directly they absolutely could log your IP address though. All the more reason to run your own rippled.

And just a heads-up to anyone who thinks it would be cool to run such a "honeypot node" and secretly log the IPs of connecting clients: IP addresses are considered "personal data" according to the GDPR, so once you actually want to use that data you logged, be prepared for some severe backlash from EU country citizens.
