Crock Pot Chicken and Salsa - used as a base for 2 meals

1.5 lbs of boneless skinless chicken breast

16 ounces of salsa

Layer the chicken at the bottom of the crockpot and pour jar of salsa on top. 

Slowcook on low for 4-6 hours. 

Once finished, remove chicken, shred and then divide chicken into 2 equal parts. 

Meal 1 

Return 1/2 of the shredded chicken to the crockpot with the salsa. Add 16 ounces of chicken broth, 6 ounces of tomato paste, 1 bag of corn kernels, 1 clove of garlic, minced and one can of black beans. I also add jalapeños. Slow cook for 1 hour. Makes 6 servings.

Meal 2

scoop the divided shredded chicken evenly into 6 flour tortillas 

add shredded cheese 

roll into burritos and place them seam side down into a buttered 9x12 baking dish. 

Top with more salsa and cheese and bake for 20 minutes @ 350 degrees

serve 

I like to make this in the middle of the week because I can make the chicken while I am away at work and then knock out the tortilla dinner in about 30 minutes and reserve the soup for the next evening. I generally just transfer the crockpot into the fridge after the soup is done cooking and then reheat it in the crockpot the next evening for dinner.
