Fried egg avocado & bacon sandwich

Easy breakfast sandwich with tons of flavor and texture.
This will get you to lunch without snacking.
I like using Garlic-Everything bagels and pepper jack cheese.

2 servings -- 700 to 900 calories per serving (approximate)

Ingredients:

  • 2 medium eggs
  • 1 small avocado
  • 4 to 6 strips of precooked bacon
  • 2 cheese slices (pepper jack, cheddar, or monteray jack)
  • 2 Ciabatta rolls or Garlic bagels

Prep:

  1. Slice bread (if needed) for top/bottom of sandwich. Place in toaster.
  2. Cut around avacado skin down to seed (discard), scoop out avocado meat and mash into paste in small bowl.
  3. Place precooked bacon between two paper towels and place in microwave.
  4. Place cheese slices on serving plates

Steps:

  1. Heat butter or use spray-butter into small frying pan with medium heat.
  2. Start toaster for bread, timing it so bread is toasted well before eggs are done.
  3. Crack eggs and begin cooking eggs on medium heat. Flip once. Cook to preferred yolk hardness (runny yolks == messier sandwich).
  4. When toaster is done place cheese slices on eggs, reduce heat to low.
  5. Then microwave precooked bacon for about 45 seconds.
  6. Remove bread from toaster, placing bottom pieces on plates
  7. Spread avocado paste on bottom bread piece
  8. Cheese should be properly melted by now, remove eggs and place on avocado'd bread
  9. Remove bacon from microwave, break each piece in half and put on top of cheese'd egg
  10. Put on top piece of bread, press down lightly to get the stack to stay together.
  11. Serve immediately.
