Gluten Free Black Bean Brownies

My mom sent this to me at some point... I don't know why since nobody in our family has any food allergies.  Maybe she was mad at me or something :lol:

Seriously though, @OzAlphaWolf I was going thru recipes that are already typed out, saw, this and remember you talking about your wife having food allergies.  Hope this can help.

Gluten Free Black Bean Brownies

1 (15.5 oz.) can black beans, rinsed and drained
3 eggs
3 Tbsp vegetable oil
1/4 cup cocoa powder
1 pinch salt
1 tsp vanilla extract
3/4 cup granulated sugar
1 tsp instant coffee (optional, but I added it)
1/2 cup 60% cacao bittersweet chocolate chips

1.  Preheat oven to 350 degrees F.  Line an 8" x 8" baking pan with foil, then lightly grease that foil.

2.  Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar and instant coffee in a blender; blend until smoth; pour the mixture into the prepared pan.  Sprinkle the chocolate chips over the top of the mixture.

3.  Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 32 minutes.  Allow brownies to cool, then lift them out of the pan with the foil and set them on a cutting board.  Cut into 16 squares.  Serve warm or cold, plain or with whipped cream or ice cream.
