Snoopy Posted March 17, 2018 Share Posted March 17, 2018 Oh @Wob...... 2 tablespoons salt 2 cups light brown sugar 1 cup (2 sticks) salted butter 1 cup light corn syrup 1/2 teaspoon baking soda Combine brown sugar, butter, corn syrup and baking soda in medium heavy saucepan; heat to boiling over medium-high heat. Cook, stirring, until mixture reaches 235 degrees F on a candy thermometer, about 8 minutes. Remove from heat. Heat oven to 250 degrees F. Carefully pour caramel mixture over popcorn. Stir mixture with heat-resistant spatula or buttered wooden spoon to evenly coat popcorn, working quickly to coat sprinkle with salt. Bake the caramel corn at 250 degrees F for 60 minutes 1 hour, stirring every 10 minutes to continue coating uniformly. Suggestions - BEFORE you add the caramel to the popcorn make sure that you have removed ALL unpopped kernels. You do NOT want to take a bite of one with caramel on it. You can also add in peanuts or pecans - just make sure that you don't give it to someone with nut allergies then. As silly as it sounds after it is out of the oven I will cover the table with aluminum foil, spray it with a cooking oil LIGHTLY, then put an oscillating fan on it for about an hour, stirring and eating popcorn as needed. Well, usually i do a double batch just so we can share with neighbors. I pop the kernels in a special pot on the stove, add salt when it’s done and add sriracha hot sauce to coat and keep tossing till it coats the entire bowl. I like spicy food. ? How much of the hot sauce do you end up putting in? I've done kettle corn sugars in the stove-top popper before. Now that I have the popcorn machine that's actually all I use the stove-top popper for. The sugar stuff just makes a mess and is harder to clean and I would never let it near my popcorn cart. I like it pretty hot....so I keep adding a little at a time until I have it coated to the consistency I like. My husband doesn’t like it too spicy so I usually just give it two squirts of the hot sauce and gently toss. It’s an easy way to add a ton of flavour. Mercury (no bat signal) has been kind enough to let this club exist even though it is not xrp related. Personally I believe that it is because in good times and bad food can help us all thru the bad times as well as celebrate the good. Right now the price is down and there are a lot of good people struggling in their hodling...
